Ça évolue lentement, mais ça évolue bien. Je perçois maintenant le cuir au nez et les tannins s'assoupissent en bouche pour laisser place au fruit

je me trouve un peu impoli
Le 2e (petit) verre est semblable au 1er:
Nez : Cuir mais moins imposant, épices, bleuets
Bouche : coule bien, toujours la longue finale, Épices et boisé, mais un peu moins amer.
C'est un vin qui est dans mon style.

Troisième (petit verre),après 20 minutes de carafe et plus chaud également:
Au nez:Cassis,bleuet,cuir et épices.Nez assez expressif,moyennement complexe mais intéressant,beau nez.
En bouche:Cassis,bleuet,vanille et épices .Plus ample que le verre précédent,un boisé est présent mais mieux intégré,un petit velouté est perceptible,fruité charmeur.Tannins présent mais pas agressant,une certaine finesse et élégance est présente,moyennement complexe et belle longueur en bouche.Ce cabernet Italien me parait bien équilibré.
Au nez:Cassis,bleuet,cuir et épices.Nez assez expressif,moyennement complexe mais intéressant,beau nez.
En bouche:Cassis,bleuet,vanille et épices .Plus ample que le verre précédent,un boisé est présent mais mieux intégré,un petit velouté est perceptible,fruité charmeur.Tannins présent mais pas agressant,une certaine finesse et élégance est présente,moyennement complexe et belle longueur en bouche.Ce cabernet Italien me parait bien équilibré.

j'en suis ,encore ,à mon troisième verre et j'aime ,franchement,ce Cabernet Sauvignon d'Italie.Rien de très complexe mais le fruité est charmeur et surtout c'est bien équilibré,rien n'accroche.Ce Cabernet Sauvignon me parait assez facile à aimé.

Selon le site du producteur,ce cabernet Sauvignon provient de deux vignobles:Estates of Gaville (Florence) et Chianciano/Montepulciano (Siena).Voici les informations ,que j'ai trouvé sur le site internet du producteur,concernant ces deux vignobles:

The 65 hectares (156 acres) of dry farmed land extends downward a gentle, south-facing slope. The 13 hectares (31 acres) of vineyards are planted mostly to Sangiovese, and other experimental grape varieties. The vineyards, in this pastoral environment, yield age-worthy wines of great structure and intensity and are part of the "Appodiati" single vineyard program. The vineyards are complemented by a 17-hectare (41 acres) orchard of olive trees that are planted to the classic Tuscan varieties of Frantoio, Moraiolo, Leccino and Pendolino. Within this estate lies an ancient, traditional farmhouse complex dating back to the 11th century that has been renovated. The main building houses a traditional olive crushing mill, as well as modern decanting and bottling equipment, known in Italian as a "frantoio". These are planted with new clones of Sangiovese and international grape varietals dedicated to our age worthy wines as well as the Appodiati single vineyard programs. These state of the art vineyards are planted to modern trellising methods with clones and rootstocks varying according to soil type. Planting densities here often exceed 8,500 plants per hectare (3,300 per acre) yielding wines of great concentration and finesse. There are also 12 hectares (29 acres) of olive groves planted to the classic Tuscan varieties of Frantoio, Moraiolo, Leccino and Pendolino that are used to produce the estate extra virgin olive oil. On the estate there is also an old farmhouse complex, complete with vinification and aging cellars that date back to the 1700’s, in which the Vino Nobile wines are produced. De retour avec un troisième gros verre et le dernier aussi. J'ai vacuviné le reste de la bouteille pour avoir les impressions de ma douce aussi. Si c'est positif, j'en achèterai lors de la prochaine promo. si c'est négatif, j'en achèterai quand même
