Palazzo della Torre comes from the plot of land that encircles Villa della
Torre, a veritable jewel of the Italian Renaissance. The wine is made using
an innovative take on the 'ripasso' technique. Most of the grapes are vinified
at harvest time, while the rest are set aside to partially dry. In January, the
wine blended with the juice from the raisined grapes undergoes a second
fermentation.
DENOMINATION:Veronese IGT.
GRAPE VARIETIES:70% Corvina Veronese, 25% Rondinella, 5% Sangiovese.
VINEYARD LOCATION:Fumane di Valpolicella - Palazzo dellaTorre - 26.39 hectares planted between1962-1989.
SOIL CHARACTERISTIC:Very varied but mostly clayey and chalky.
TRAINING SYSTEM:Pergola trentina.
HARVESTING METHOD:
Hand harvest carried out during the
second fortnight of September for the
grapes which will be dried. Hand harvest
during the second fortnight of October
for the grapes that are to be vinified
immediately.
PRESSING:
De-stemming and pressing of fresh
grapes in October while the dried grapes
undergo the same process during the first
half of January.
FERMENTATION:
In temperature controlled stainless steel
tanks. Malolactic fermentation: in mid-
April in oak.
AGEING:
Elevation for 15 months in second-use
oak barriques, blended together for 2
months and then bottle-aged for 7
months.
AVERAGE ALCOHOL CONTENT:
14,50 % Vol.
SERVING SUGGESTIONS:
Serve at 18°C (64°F) in large ballon
glasses.
FOOD PAIRINGS:
It pairs well with a wide range of Italian
cuisine, such as pasta and risottos made
with full-flavoured, spicy sauces and
white and red meats, roasted or grilled.
